Apple Pecan Cake

Ingredients:

• 2 cups Mina's Purely Divine All Purpose Baking Mix
• 2 teaspoons baking powder
• ½ teaspoons baking soda
• ½ teaspoons salt
• 1 cup sugar
• 1 cup sour cream
• 2 large eggs
• 1 Tablespoon vanilla
• 1 ½ cups peeled and chopped granny smith apples
• 1 cup chopped pecans

Preparation:

1. Preheat oven to 350º F.
2. Combine Mina's All Purpose Mix, baking powder, baking soda and salt.  Set aside.
3. In another bowl, mix well the sugar, sour cream, eggs and vanilla.
4. Combine all until just moistened. Fold in the chopped apples and pecans.
5. Bake in greased Tube Pan for 40-45 minutes
