Potato Bread

Ingredients:

  • 2⅔ cups Mina's Purely Divine Bread Mix
  • 2¼ tsp yeast
  • ½ cup warm water
  • ½ tsp salt
  • 1 tsp sugar
  • ½ cup potatoes, cooked & mashed
  • ½ cup coconut, almond or soy milk

Preparation:

  1. Spray one 8" x 5" loaf pan.
  2. Dissolve yeast and sugar in ½ cup of warm water, let rest for 10 minutes until yeast works.
  3. Add Bread Mix, salt, rest of water, coconut, almond or soy milk and mashed potatoes.
  4. Mix on medium high for 3 minutes
  5. Scrape into prepared pan and cover with oiled plastic wrap.
  6. Set in warm draft free place for 1-1½ hours until dough rises to top of pan(s).
  7. Preheat oven to 375ºF.
  8. Remove plastic wrap & gently, but lavishly, brush top with olive oil and place into oven
  9. Bake 40-45 minutes.

Yield: 1 large loaf
