Overnight Diner Rolls

These rolls are soft and tender and a hit with everyone who tries them. They are the perfect accompaniment to breakfast or Easter Sunday lunch. I hope they are as big a hit with your family as they are with mine.

Ingredients:

  • 1 pkg.( 380 grams) Mina's Purely Divine Bread Mix
  • 1 pkg.( 7 grams) yeast
  • 1/2 cup warm water
  • 1 cup boiling water
  • 1/2 cup non-hydrogenated Shortening
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 large egg, beaten

Preparation:

  1. Dissolve yeast in warm water in a small bowl.
  2. In mixer bowl dissolve shortening, sugar and salt in boiling water. About 5 minutes.
  3. Add bread mx, yeast mixture and egg and mix for 2-3 minutes until well blended.
  4. Grease 18 muffin cups. Divide batter evenly in the muffin cups.
  5. Cover with greased plastic wrap and refrigerate several hours or overnight.
  6. Rolls will rise in refrigerator
  7. When ready to bake, remove from refrigerator and uncover.
  8. Preheat oven to 350 degrees.
  9. Bake for 25 minutes or until browned.

Yields: 18 Diner Rolls
