Ingredients:

1½ (225 g) Cups Mina's Purely Divine All Purpose Baking Mix

1 Tbsp (12.6 g) sugar

½ tsp (2 g) baking powder

½ tsp (3 g) salt

2 cups (480 g) milk, almond, coconut or soy milk

2 large eggs (100 g)
-
2 Tbsp (29 g) melted butter or margarine

1 tsp (5 g) vanilla extract
Preparation:

Mix together baking mix, sugar, baking powder and salt.

Add eggs, milk, butter and vanilla. Whisk until smooth

Spoon ¼ cupfuls into buttered crêpe pan.

Swirl batter in pan to cover.

Cook until top is dried.

Flip crêpe and cook 30 seconds more on other side.
Yields: Approximately 20 x 6" Crêpes
