Crepes

Ingredients:

  • 1½ (225 g) Cups Mina's Purely Divine All Purpose Baking Mix
  • 1 Tbsp (12.6 g) sugar
  • ½ tsp (2 g) baking powder
  • ½ tsp (3 g) salt
  • 2 cups (480 g) milk, almond, coconut or soy milk
  • 2 large eggs (100 g)
  • 2 Tbsp (29 g) melted butter or margarine
  • 1 tsp (5 g) vanilla extract

Preparation:

  1. Mix together baking mix, sugar, baking powder and salt.
  2. Add eggs, milk, butter and vanilla. Whisk until smooth
  3. Spoon ¼ cupfuls into buttered crêpe pan.
  4. Swirl batter in pan to cover.
  5. Cook until top is dried.
  6. Flip crêpe and cook 30 seconds more on other side.

Yields: Approximately 20 x 6" Crêpes
